That's really a maps.google.com question. The only effect in the API is that the API inherits the same map tiles as maps.google.com.
I notice that clicking on such POI icons in maps.google.com causes a corresponding Wikipedia entry to be displayed. POIs that I've looked at around here that have no icon don't have a geolocated Wikipedia page. Try adding a geolocated Wikipedia page for the parks and courses that you want to appear.
