In general, the Google free-form input is more useful but with separate 
fields, a geocoder would be less likely to return "Dumfries Close, 
Blackpool" when you ask for "Bispham Close, Dumfries".

If you happen to have a database that has correct info for the separate 
fields, then, all other things being equal, I'd expect a fixed-format 
geocoder to return fewer bogus results.
