It would be tricky to do with GGeoXml, but with GeoXml and EGeoXml you can write your own createMarker function that makes a call to your mySQL server script to obtain the infowindow contents.
You need to be a little careful with your nested callbacks, to make sure that you obtain closures from both asynchronous activities (the click and the server call).
