Not sure what you mean. You can draw a polyline from A to B to C; this won't follow streets by itself. Or you can get directions from A to B to C using streets known to Google; you can't choose which streets it uses for that. No, there is no 'avoid' feature in GDirections. You could test a GDirections response to see if it passes through a no-go zone, and if so try again using some alternative waypoint that you specify to try to force it re-route.
