It's the same answer as you got at Bing Maps.
Polygons and polylines drawn onto a client map are the client's
business, and not transmitted to Google.
You haven't mentioned markers or infowindows, but might find this of

Note that you can opt out.
Of course Google keep some kind of record of visitor's IP, just the
same as any other non-trivial website -  to minimise the impact of
spammers, service hogs, etc. on the rest of us.
Bottom line - if you have secrets, don't put them on the web.
