That depends how you create the polyline you are talking about.

If you create a polyline using just two end points, you get a straight
line between the two end points.  That doesn't sound like what you
want, though.

If you request a route between two points from the Directions service,
and use the polyline that the service returns to you in its results,
you will have a polyline that curves and turns as it follows streets.
