I am using v3 on a Windows Mobile.  Much faster, very nice.  I'm
looking forward to the new goodies when you get them.

What is the proper way to provide a Pan function to the user?  I've
tried setting

 style: google.maps.NavigationControlStyle.DEFAULT

on the mobile, only the +/- icon shows, which makes sense.  But there
does not seem to be any way to pan the map.  The Finger gestures are
processed locally, and do not seem to be processed as mouse drag
events.  I am using the latest Opera browser, as the mobile IE browser
is still quite poor.

I noticed this issue in Maps API v2 as well.  I also noticed that your
native Google Map application does process Finger gestures as a mouse
drag.

Any ideas besides setting  style:
google.maps.NavigationControlStyle.ZOOM_PAN?  I hate to use up so much
real estate.
