I recommend sticking with v2 for production sites until v3 has graduated
from Google Labs.
v2 is a mature product. Each v2 release receives thorough testing before
release and Google try really hard not to make any syntax changes that
break existing pages.
Google Labs releases receive less testing and have no guarantee of
syntax stability. This enables Lab APIs to be developed more quickly and
for the syntax to be experimented with.
