This sounds difficult to debug without actually seeing the content in the info window.
Are you setting a max width on the InfoWindow object? Your code isn't live yet, but is it possible to replicate this within a simple test map with a single link which opens up the content in a single InfoWindow? I imagine it has something to do with the HTML content inside but can't be sure without seeing it live.
