I might get shot for saying this, but the general feeling by deliberately leaving the limits vague, they (as in Google) they dont want you to worry about it.
Just setup maps as best fits your situation. Use one key per logical application (even it spans multiple hostnames). For example, if the subdomains are all for the same company, just use one key, but if they are seperate entities - use their own key. Google will contact you - after 90 days, if they think your map is using too many requests.
