In Google Talk (current libjingle), you create a single media session with multiple content entries. We have retained that in the standardized Jingle specs you can find at xmpp.org (and which should be finalized real soon now [tm]). But Google Talk and libjingle do not yet support the standardized Jingle (I think they are waiting for the XMPP Standards Foundation to issue real namespaces and such, which will happen when the specs advance to Draft.)
