When my theme initially wouldn't test, I also suspected that
Kathleen's quoted syntax, "<categories>animals,entertainment</
categories>" was wrong and tried what I thought would be the more
likely syntax "<Meta name="categories">animals,entertainment</Meta>".
My theme tested OK at my end using the different syntax, as you have
also discovered.

However, as there was no way of finding out how either syntax would
work at Google's end, short of waiting a couple of months (or perhaps
for ever), I thought I'd ask the question and hope for a quick
retraction/clarification from Kathleen. Judging by the posts
complaining that themes are NEVER updated, it will be very interesting
to see whether your update on categories ever happens. I'll check back
here in a few months.

I wonder how all the themes which are now showing up in the new
categories actually got there so quickly? Someone must have overridden
the system somewhere.

Google really needs to find a cure for the "mushroom syndrome" we
developers are all suffering from!
