Just resubmit the updated XML in the same way as you did the original, with the same URL. Google will overwrite the old XML on its server. See the last paragraph in the Developer's Guide: http://code.google.com/apis/themes/docs/dev_guide.html#Update
With present backlogs, I'd suggest allow at least a three weeks for the change to go through.
