You can use visualizations using a non-published spreadsheet just as you do with a published spreadsheet. Get the data source url from the spreadsheet, in its non-published state, and use it in the Query (or in the Gadget "data source url" parameter). This should work fine, but note that users can see the visualization only if they're logged in and have access to the spreadsheet. Other users will probably get an "access denied" or "user not authenticated" error.
