This is possible and simple.
Please see at the configuration options docs the parameter called
'dateFormat'. (
http://code.google.com/apis/visualization/documentation/gallery/annotatedtimeline.html#Configuration_Options
)
If you add an option like 'dateFormat': 'EEE'
