Sorry, I failed to clarify: I am using google-visualization-java (http://code.google.com/p/google-visualization-java/) to create a data source on a servlet. Now that I am thinking more clearly and have experimented a bit more, I suspect this is just a limitation of that API, and so I'm off to register it as an issue with that project.
In the meantime, if anyone has workarounds, I'd love to have them.
