I agree that the interpolateNulls option in the areaChart is missing. You can open an issue on this here: http://code.google.com/p/google-visualization-api-issues/issues/list
This goes for your interpolation formatting as well. Now that the line formatting (scope and emphasis) exist, I believe that it won't be long till it will exist.
