You can change the text color with the bubble.textStyle.color option. There is not an option to remove the white border around the text. I answered the other part in the other thread ( https://groups.google.com/d/msg/google-visualization-api/LmNm4IKKi5M/69-t2S4mixgJ ).
If you are willing to get your hands dirty and mess with the SVG/VML code produced by the API, then you can probably achieve some of what you want, but it won't be easy to do and it is possible that future API versions will break your code.
