Some countries don't appear on the map if they are too small - this is probably the case with Palestine on large maps (middle-east region and larger). Drilling down, the map for Palestine exists, but it seems like the maps treat it differently, likely as a result of the territorial dispute with Israel. You can make a feature request<http://code.google.com/p/google-visualization-api-issues/issues/list>to add support for mapping Palestine. In the meantime, you can map values for Palestine by setting the "displayMode" option to "markers".
