The Visualization API is not yet touch-friendly; you might have some 
success using the code posted here: 
http://stackoverflow.com/questions/1517924/javascript-mapping-touch-events-to-mouse-events,
 
though I haven't tested it.  There is a related issue in the bug tracker (
here<https://code.google.com/p/google-visualization-api-issues/issues/detail?id=925>)
 
that you can "star" to get updates.
