RYan,

Thanks for your comments. Regarding your requested features:

Axis breaks - also known as 'gaps'. This might apply to any type of chart,
not just a line chart. We have partially implemented such a feature, not
released yet, but there is more work to be done because the chart itself
needs to be drawn first as if there is no gap, and then clip out the gap.
That way a line across the gap, for example, would have the correct slope
on both sides of the gap.

I'm not sure what you mean by allowing infinity. Do you mean that data
values might be Infinity (or -Infinity), and they should somehow be plotted
on the chart, perhaps with an infinite size gap? Have you found any
example where this is done? Maybe some kind of hyperbolic scale would be
appropriate here to accurately represent infinity on the axis.

We do allow individual data values to be plotted with their own style now,
using a style 'role'.    See
https://developers.google.com/chart/interactive/docs/roles

The background color of regions can be simulated by using an area chart
(with additional series values), but this is admittedly a hack. We are
thinking about how to provide this as a built-in feature.
