If you use a DataView, and set its columns to an empty array, and then draw the chart with that data view, you will get an empty chart.
But what happens depends on what type of chart you are drawing; some charts might complain about not having enough columns. That would be a bug, which you should let us know about. But as a workaround you could arrange that you give the chart some minimal data, and set options to draw it with color 'none'.
