If you are experienced in Java, and especially Swing, you should have no problem picking up GWT. The best thing to do, in my opinion, is just to look through all the sample code in the demo section.
As for the PayPal and payment systems, that is out of the scope of GWT. I'm sure there are plenty of demos out there, especially from PayPal, to get you started and it shouldn't be much work to adapt the concepts into GWT.
