Thanks for taking a look. There are many new features added to the gwt-google-apis bindings for Maps since the mapitz version, but Streetview is not one of them. I am working with other developers on several other APIs and haven't had time to devote to Maps recently other than bugfixes. I welcome any patches to the current gwt-maps implementation that would implement Streetview or any other feature you'd like to see. (Someone contributed reverse geocoding last week!)
