I'd never like to work on a company that doesn't trust in me to access the 
code I need to maintain.

The best you can do to protect your company is to make the developers sign 
a document stating that the code they would access is a property of the 
company, and they are not allowed to copy or distribute it at their will.

In my opinion, if you're afraid of any developer can view the code, 
understand it, and then create a competitor to your company, I think the 
problem is with your company environment and how happy and inspired are 
your employees.
