Well, all versions up to the current GWT 1.5x all work with IE6, so, as long as you are developing for a legacy browser, I see nothing wrong with using an old version of your toolkit if it comes to that.
But in reality, deferred binding allows you to continue having a separate javascript payload for IE6, so I see no reason why it wouldn't be possible to support IE6 indefinitely.
