Ian, Which jars did you take off the classpath? The errors you're getting look like the compile step isn't getting the right jars on its cp.
All you should have to do to use the GWT 1.6.2 SDK is set that under "Google > Web Toolkit" in your project's properties; manually changing the classpath really shouldn't be necessary.
