I'm pretty sure that incubator is linked to the latest build, not trunk. It includes a bunch of stuff that, AFAIK, is targeted for inclusion at some point in the future in trunk.
As for use in real projects, it's up to you. Probably the incubator mailing list would be a better place to ask.
