There is nothing magic about the 'war' folder name with respect to the ant build file. You'd need to update the names in that file accordingly.
If you use the eclipse plug-in then I'm guessing it is specifically looking for the war folder so changing the name will likely break things. There might be an option to change this but I don't have much experience with the plug-in.
