My favorites are "GWT in Action" by Rob Hanson and Adam Tacy, and "Google Web Toolkit Applications" by Ryan Dewsbury
Unfortunately both of these were published over a year ago, so GWT has undergone some changes since then. They do have some very good information, but things in the GWT world are a bit different now. Someone really needs to work on a new book that covers RunAsync, UIBinder, Animations, MVP design and all of the shiny new bits that have appeared in GWT since 1.4.
