Based on your replies it seems that maven may make some processes
easier but is non-trivial to setup with GWT, and if the project is
relatively small with very few developers it might even add more
complexity to the project that it removes. Do you agree?

It's still not clear to me if it will be considerably more difficult
to convert an existing project to use maven than creating a project
from scratch in maven. If there is no noticeable difference we might
just as well start developing without maven and then, possibly,
convert to maven later on. Does that sounds reasonable?
