I'm currently working on a sample app for my GWT logging framework and it uses Maven.
http://github.com/derjan1982/slf4gwt/tree/master/samples/ It might be an example setup for you, allthough it's not finished yet. I'm using m2eclipse for development and everything works, except I've to enable GWT support on my projects ( http://www.ducktools.org/2010/04/gwt-eclipse-tomcat.html) manually.
