I was writing a lot of code over the weekend, and swore that I'd
gotten compile error using a TabPanel in a .ui.xml saying it was, and
thought that the documentation had been also marked the same way....

Maybe I was seeing things.

Completely agree that LayoutPanel adds confusion for new users (of
which, I count myself).

Still -- the docs claim it only works in quirks mode, yes?  My
experience has been counter to that.
