I'd certainly use Buttons. Performance wise, calling innerHTML is a lot faster than doing DOM manipulations. If you are using GWT widgets for every button, it is going to slow down the site. Usability wise - use a button when you mean a button. It makes your website more accessible and standards-friendly.
