I guess it depends on what you mean by documentation. I don't know about the release date, but for now there's always the IO sessions, discussion on the contributors board, and of course javadocs from trunk (which can be generated directly or are periodically updated here: http://google-web-toolkit.googlecode.com/svn/javadoc/2.1/index.html?overview-summary.html )
