You can't just use any Java library on the GWT client side since GWT is not Java. Hibernate uses a lot of stuff that the GWT compiler can't translate to javascript so using hibernate in this way is not going to work.
You can however offcourse use Hibernate at the serverside. To have a good integration you can think hard (this is what I did) and create your own solution, or you can Google for "GWT hibernate" as there is a project available some where that does this.
