Nothing related to GWT, use JPA/Hibernate forum. You are create and drop
the database each time that EMF is created:
<property name="hibernate.hbm2ddl.auto" value="create" />
<property name="hibernate.hbm2ddl.auto" value="create-drop" />
Use update instead create-drop.
