Given the total absence of feedback, I was thinking about reverting the change and publish 2.5.0 with absolutely no modification since 2.5.0-rc2 besides the updated dependencies. In the mean time, you can use gwt-maven-plugin 2.5.0-rc2 with GWT 2.5.0; see http://mojo.codehaus.org/gwt-maven-plugin/user-guide/using-different-gwt-sdk-version.html That's what we've been doing since the GWT 2.5.0 release.
