What time zone are you in? It sounds to me like you're running into timezone issues.
The DateBox returns a Date representing a specific instant in time, not a "day" even though most people are using it to select a day. Worse, depending on how you set the date when you reload the form, you can easily get off-by-one errors as you describe. We had a similar issue when adding due dates to tasks and supporting all day events in our software. I would recommend you check out our UTCDateBox at http://code.google.com/p/gwt-traction/.
