If you want to use REST calls : In my company, on the backend we use Tomcat + Jersey (JAX-RS 2.0) : https://jersey.java.net/ You could also have a look to JBoss + RestEasy: http://resteasy.jboss.org/
For our GWT client we use RestyGWT to make the REST calls. http://resty-gwt.github.io/ , I wrote a tutorial on how to make RestyGWT talk to a Tomcat + Jersey, it might help http://ronanquillevere.github.io/2014/03/16/gwt-rest-app.html Of course your can still build your own queries by using RequestBuilder if you prefer.
