If the application is compiled the *.ui.xml files are not part of your application. Only the generated Java class for that *.ui.xml file is part of your application and that file is generated by the UiBinderGenerator at the time you compile your app. If you want to store *.ui.xml files in a Database and then replace them after you have compiled your app: That is not possible. What you can do is to replace them before/during compilation, but that is probably not what you are looking for.
