That's correct. As you pointed out, the 3rd party data providers doc (http://code.google.com/apis/health/data_providers_overview.html) mentions that.
At this time, Google Health (and the API) only allow for a current snapshot of a user's health record. These types of data visualizations are features that are highly requested.
