Hi, If you are referring to your email address on your GooSync account then you can change that on the My Details page of your GooSync account.
If you mean the email address used for your Google authentication in GooSync then this can be changed on the My Google page of your GooSync account (you would need to delete all existing settings before entering the new email address).
