Hi Chris, How are you trying to change the resolution?
Are you using the desktop display application in the graphic user interface, or are you using the command line. If you have installed a Linux distro previously on the machine, you could (if you still have it) take the original xorg.conf file and use the information in that to write an another for the GOS install. OR For the sake of quick assistance ( :)) if you're not familiar with the command line, reboot in safe mode and then from the command line type sudo dpkg-reconfigure xserver-xorg then follow the prompts and see if that works.
