You have "providers" which each have different time slot categories (each category has a label, +/- a colour, +/- an icon, and a default duration) Each booking can be tagged with a "type" (eg driver's medical, health assessment, procedure - all user defined) Patients = customers would be the same So I do think it could be useful for your purpose almost out of thebox > offline system that could be merged with the main one later?
