There is no meaningful maximum size of a GPFS filesystem as it is at least a million times bigger than the biggest filesystem (of any type) in the world today.  Current limit is  633825300114114700748351602688 bytes
The largest tested to date according to the FAQ is a mere 18 Petabytes, IBM would certainly be interested if your proposed system is significantly larger :-)
 
Likewise for a LUN aka Network Shared Disk (NSD). Most likely you would limit the size of an NSD by the maximum size supported by the underlying device driver. As an example, one customer I know of has 240TB per NSD.
Note though if expanding an existing filesystem, it is good practice to try and make the new NSDs not hugely bigger tan any existing NSDs,particularly if added to the same storage pool.
 
The online FAQ gives actual limits, on not just the maximum filesystem size (2^99 bytes), but also maximum number of NSD servers,  NFS servers, etc.

ps. Note that GPFS 4.1 is relatively old now - there have been 2 releases since, both adding significant new functionality.
