After some research (OK, I read RFC3156) I've reported this to Apple as a bug. 
The RFC explicitly states that the MIME entity headers are included in the part 
of the message that is signed, and that mail agents should treat both the 
message and the signature parts as opaque data and not modify them in any way.

Do I expect anything to come of it? Let me put it this way: I won't be holding 
my breath.
