We have no knowledge of any HDMI command channel stuff (if there even is any), not sure if the EOS would be able to remote control over HDMI, or just deliver a picture stream. Similar for Bluetooth, not sure if it allows remote control over Bluetooth. (Canon claims neither I think.) Still best bet is doing control over regular USB, which gphoto supports.
