I agree the solution is not to buy an iPod! To be honest I have two of them
and the support under Linux is flaky at best. I used gtkpod and gPodder
together fairly successfully until recently and I haven't got to the bottom of
where the problem lies.
That being said Bug #4 has recently been added to SVN, which allows some custom
commands to be executed when files are downloaded. Perhaps this can provide
you with a workable solution?
Better still maybe another custom command event can be triggered during the
sync process?
