In that case and in certain circumstances it might not be necessary to create a database table for the output vector. It would thus be nice if r.to.vect had an option that would allow not to create an attribute table if the -v flag is used. Try r57333. The change is slightly different than requested: the creation of an attribute table can also be suppressed if the -v flag is not used, in which case a warning is printed out that raster values will be lost.
